Cod and mash vegetables

Ingredients (1 portions):

240 gr cod

1 tablespoon capers

2 sun dried tomatoes

2 tablespoons olive oil

300 gr broccoli

200 gr swede

200 gr celeriac

Half lemon

Diced the swede, celeriac and most of the broccoli: boil in hot salty water for 7 minutes. Then drain and place in a pan: add pinch of salt and couple of tablespoons of water. Leave on medium heat for few minutes and then slightly mash the veg with a spoon or masher.

These quantities will make 3 portions of mash vegetables.

In another pan add olive oil, tomatoes and capers and the remaining broccoli. Add the cod. Cover with a lid for 5-8 minutes. Remove the lid, add the lemon juice and leave the lemon in the pan for more flavour. Let all the liquid being adsorbed and serve half of the cod with a slice of wholemeal bread, a portion of mash vegeatables and complete with a fruit or add another portion of mash vegetables.

Leftovers are perfect for a lunch box. A portion of fish, 2 portions of vegetables (or 1 portions of vegetables, and a fruit)
