Edamame beans, peas and quinoa

Ingredients (3 portions):
450 gr edamame (frozen)
250 gr peas (frozen)
1 shallot
140 gr cooked mixed quinoa
90 gr ham diced
2 tablespoons extravergin olive oil
1 tablespoon tomato concentrate
fresh parsley

In a large pan warm the oil, add the shallor and let sweat for 5 minutes (add some water to avoid burning the shallot). Add the ham and let "fry" for a minute. Add some parsely.

Add the tomate concantrate and stir.
Add the edamame.
After a couple of minutes, add the peas, pinch of salt. Stir, add a couple of tablespoon of water and put the lid on.
After 5 minutes, remove the lid and add the quinoa.
Keep stirring until the excess liquid is evaporated.
Divide the mixture in 3 equal part and complete with a portion of carbohydrate.

For my dinner, I've chosen 60 ml of red wine, a small piece of toasted sourdoug wholemeal bread and 5 strawberries
