Not the usual soda bread

Ingredients: 400 ml buttermilk (400 ml milk and juice of half a lemon if buttermilk not available) 1 tsp baking soda, half teaspoon salt, 400 gr sifted flour (this is the total amount of flour, in general I start with 350-380 gr and then I see how the ingredients behave all together: usually at the end I add like a tablespoon of white flour to clean my hands and help to roll all the dough).

My usual flour mix is: 100 gr soy flour, 50 gr oat (I roughly blend porridge oat) 180 gr wholegrain flour 30 gr white flour. If I need to add flour, I add white flour.

If are you using milk, pour the lemon in the milk and wait few minutes. Put all the dried ingredients and add half of the wet, start to roughly mix (you can start with a fork at the beginning) then add all the wet ingredients.

Once it is all roll up, with a knife make a cross (1-2 cm depth) and put in baking tray. Do not over mixed: you can fill the dough rising in your hand.

Bake it at 200°C for around 20 minutes; then turn it down at 180°C. A After around 40 minutes remove the bread from the tray, and leave on the oven grate.
