Turkey mini burger coated with oat and sesame seeds

Turkey meat is a great source of lean protein, advantageous for keeping our overall health on track. Nevertheless, it might be a difficult choice, as being lean could result quite dry, and not so appetizing. It is not the case for this recipe. I enriched lean turkey mince with spinach and cheese, just enough to make the meat juicy and appetizing. Try to believeš

Ingredients (8 mini burger):
500 gr turkey mince
200 gr fresh spinach
30 gr caciocavallo cheese
1 glove of garlic
salt
black pepper
turmeric
3 tablespoons sesame seeds
6 tablespoon porridge oat
2 tablespoon extra virgin olive oil

Wash the spinach, without removing the excess of water, put them in a pot, add a pinch of salt and cook with a lid on for 5 minutes. Then, drain them.
In a bowl add the mince, the spices, the garlic (crushed), the caciocavallo and the spinach once cool. If you don't have the caciovallo, any other cheese will work, better if it is the cheddar like kind of cheese.
Start mixing with a spoon, then carry on with your hands to perfectly combine all the ingredients.
Divide the mix, first, in 4 parts, then each part in half.

On a plate mix the oat and sesame seeds with a teaspoon of turmeric (will help for a gorgeous final colour!).
One by one cover all the burgers

At this point you could cook all of them, or keep some for the freezer. In this case, carefully wrap them individually in cling film, then in a bag for freezing.
I decided to bake them: 15 minutes at 200°C. I placed them on a baking grill cover with oven proof paper. I used the oil to grease the paper and on top of the burger. Alternatively, in a pan add the oil and cook for about 6 minutes each side with a lid on, for a juicy result.

I had them last night for dinner.
Two mini burgers with 80 gr of steamed black rice, 80 gr of mixed pulses (dressing: salt, parsley, extra virgin olive oil and red wine vinegar) and stew onions.
Stew onions: slice the onions; in a big pan add a tablespoon of extra virgin olive oil, add onions, salt and some fresh thyme. After 3 minutes on high heat, add 3-4 tablespoon of water, reduce the heat and with a lid on gently cook for at least 40 minutes (even longer for a richer taste).
