A smart way for increasing your vegetables intake is preparing soup. And if you image winter evenings, a nice bowl of warm soup is probably the best way of starting your dinner.I like to prepare a big pot of soup.
I like to prepare a big pot of soup: I like spending a bit of time by chopping the vegetables in fairly small chunks. In this way the cooking time is reduced. Then I blend everything! I will have couple or three dinner starters plus few portions for my freezer, ready to be used during busy weekdays (or lazy days).
I do normally cook the vegetables in water with a bit of salt. In this way I can add fresh dressing (usually olive oil) and fresh spicy of herbs.
Ingredients:

2 parsnips
2 big turnip
400 gr celeriac
200 gr celery
5 brussel sprouts
400 gr cauliflower (fresh or frozen)
200 gr broccoli (fresh or frozen)
Cover with water, pinch of salt. Bring to boil and let simmer for around 20-30 minutes.
