Beetroot Soup

Ingredients:
4 big beetroot

A fist of red lentils
200 gr celeriac
2 big leeks
200 gr frozen mix peas, broad beans, and green beans
3 cloves of garlic
500 gr celery
Salt
Hot water to cover
Roughly chopped and put in a big pot, cover with hot boiling water, put a lid on and let gently simmer for 20 minutes.

Let cool down and blend. From this recipe I obtained 7 portions, around 2 big ladles each. Ready for dinner (figure above, decorate with fresh celery, olive oil, turmeric and black pepper) and for feeding my freezer :)
