Cod with onions and tomato salsa

Ingredients (5 cod portions):
3 big white onion finely choppped
500 ml tomato salsa
1 tablespoon tomato concentrate
2 tablespoon olive oil
2 tablespoon water
600 gr cod
In a large pan on medium heat, add the oil and then the onion; stir, add the water and let steam on a low heat with a lid for at least 20 minutes.

Add the tomato paste and the salsa.
Carefully place the cod (cut in small chunks).
Cook with the lid on for a couple of minutes; then remove the lid and leave for other 12 minutes.

This side is perfect for some pasta or brown rice (like 30-40 gr each), topped with some fresh parsley.
It works perfectly with a side of steamed vegetables:
Steam some broccoli and cauliflower (around 300 gr in total) and serve with the cod with a piece of bread (better if wholegrain)
