Green omelette

Ingredients:
1 egg
4 white eggs
20 gr grated parmesean
1 small courgette diced
fresh parsely
1 teaspoon spirulina powder
1/2 teaspoon turmeric
1 tablespoon extravergin olive oil
Pinch of salt, black pepper
Heat the oil in a no-sticky pan: add the courgettes and parsley. Mix all the other ingredients in a bowl, then pour over the courgettes and cover with a lid. Cook for 4-5 minutes. Remove the lid and flip the omelette. Cook for other 2 minutes.
I completed the lunch with 30 gr wholegrain bread, 200 gr french beans (dressing: crushed garlic, 1 tbsp extravergin olive oil, pinch salt 1/2 tbsp red wine vinegar), 150 gr tomatoes dressed with a bit of extravergin olive oil and pinch of salt. Then 3 plums.
