Not the usual soda bread (with egg)

Who does not like a nice piece (especially if warm) of homemade bread? I quite do. Although lot of options are available both at big store and shop, sometimes I find quite, let's say therapeutic, baked my own bread. Soda bread works quite well as it doesn't required too much kneading (barely nothing) and there are no problem of finding the right spot in the kitchen, with the proper temperature. No need as well to wait for the dough to be ready. Switch on your oven, mix the ingredients and just wait :) I did modified some "traditional" recipes (see also version without egg): I reduced the amount of white flour and increased the protein content using soy flour.


Ingredients: 300 ml buttermilk (300 ml milk and juice of half a lemon if buttermilk not available) 1 tsp baking soda Half teaspoon salt 1 egg (slightly beaten, I added it once the lemon “makes” the buttermilk, or directly to buttermilk) 400-430 gr sifted flour (this is the total amount of flour, in general I start with 400gr and then I see how the ingredients behave all together: usually at the end I add like a tablespoon of white flour to clean my hands and help to roll all the dough). My usual flour mix is: 100 gr soy flour 50 gr oat (I roughly blend porridge oat) 200 gr wholegrain flour 50 gr white flour.

Optional ingredients: Sometimes I add in the dough mix a tablespoon of flaxseed and goji berries (blended together) and half a tablespoon of porridge oat on top of he dough before putting in the oven.


Pre-heath the oven at 200°C, with fan. If are you using milk, pour the lemon in the milk and wait few minutes. Then, add the egg. Put all the dried ingredients and add half of the wet, start to roughly mix (you can start with a fork at the beginning) and finish to add the wet. Once it is all roll up, with a knife make a cross (1-2 cm depth) and put in baking tray. Do not over mixed: you can fill the dough rising in your hand. Bake it at 200°C for around 20 minutes and then turn it down at 180°C. A After around 40 minutes remove the bread from the tray, and leave on the oven grate. It usually takes around 60 minutes.
