Tofu "omelette"

Are you a tofu sceptic?
Don’t worry, I was too. Mainly because I had no idea how to cook it. Most of the recipes I could find where Asia inspired: nothing wrong of course! But looking at my cupboard, ingredients I used most frequently, my mind started working.
Here, one of my first attempts with tofu.
The first idea was to make a burger but the result looked more like an omelette than a burger! Anyway, regardless the most appropriate name you can find (let me know if you have a better idea :) ) the result was quite successful. Yeah!
To complete the meal I would suggest (what I did) a big fresh salad made with 1 small carrot, 2 fists of celery, lettuce, a fist of grated celeriac and a fist of white cabbage, lightly dressed with salt, black pepper, olive oil, lemon and fresh basil.

Ingredients:
80 gr tofu
10 gr edamame beans
20 gr scamorza finely sliced
tablespoon oat flour
6 roasted peppers (I bought ready peppers in a jar, but you can roast your own)
Fresh basil, turmeric, black pepper
Blend all the ingredients together, but the scamorza and basil.
In a pan add olive oil and then gently add the tofu mixture. Let it cooked for a couple of minutes, medium heat, with a lid. Then, carefully, flip the "tofu omelette" add the scamorza and leave until the cheese start melting.
PS: the omelette did really look good in the pan. Nice shape, really inviting!
I can't say the same for the look in the pan....
