Late afternoon, maybe time for a snack but training late evening today (usual dinner time) so what to do?Snack, maybe a big one, training and have a very late dinner, which will disturb a bit my usual routine? No...I've decided for an early light, quick yet delicious dinner at "traditional" snack time, and having a bigger snack after training (snack was a smoothie: 140 gr banana, 150 gr Greek yogurt 0%, 5 almonds, splash of water for right consistency).
It was a great idea: I had right energy through my training session, I had the right fuel after it with my smoothie without any heaviness in my stomach = great night sleep!

Ingredients:
1 egg
2 white eggs (60 gr)
15 gr fontina dolce cheese (or any cheese which can easily melt)
1 tablespoon extra virgin olive oil
1/2 teaspoon sesame seeds
Pinch of salt, turmeric, black pepper
110 gr black beans
Fresh chilli pepper
Fruits: 1 small kiwi, 1 passione fruit, 1 tangerine
In a no sticky pan add the beans with the chilli pepper just to re-heat (add some water in needed.

In another pan, heat the oil then add the sesame seeds; after a minute add the white eggs and the egg; add the spices.

After a minute or so, gently mix with a spatula to break the yolk.
Add the cheese and wait for another minute.

Gently fold your omelette and cook for about 2 minutes.
The cheese will melt and create a wonderful warm heart of godness.

I admit, my chilli pepper was really strong!!!But I love spices :)
So perfect to clean my mouth was a some fruit (I think I had the smallest kiwi ever!!)
