Protein balanced homemade granola

Making your own granola is very simple and fairly quick. You can of course buy it, but making it allows you to mix and match flavours and better check on the ingredients. Here, as for all my recipe, I tried to balance all the three macronutrients, without scarifying the flavours. I made a small batch because in this way, once this is over, I can make a new batch, maybe changing some flavours.
Quinoa, wholemeal spelt, and oat help to keep glycemia under control, as well as the absent of sugar or syrup.
Usually, granola comes with dried fruit, but I prefer to add some fresh berries while enjoying my granola with a plain yogurt.
Ingredients:
20 gr oat flakes
20 gr quinoa flakes
30 gr wholemeal spelt flakes
80 gr soy flakes
15 gr linseed
15 gr Chia seeds
40 gr almonds crushed.
5 gr dark cocoa
1 orange zest
½ orange juice
15 gr honey
40 ml water
1 tsp extra virgin olive oil
In a pot, bring to boil for 5 minutes the mix of honey, orange zest and juice, oil, and water. In a bowl mix the other ingredients. Pour the liquid on top and immediately mix with a spatula or spoon (gently). Arrange the mix in one layer in an oven tray.
Bake in a pre-heat static oven at 150°C for 10 min, then carefully mix it with a spatula and bake for 10 min at 170°C.
Once cool, break and conserve in an air-tight container.
