Smoked trout with tomatoes bruschetta

Ingredients:

100 gr smoked trout

for dressing: few drops of extravergin olive oil, pinch pepper, and few drops lemon juice

80 gr cannellini beans (dressing: extravergin olive oil, fresh thyme, fresh parsely, pinch salt, red wine vinegar)

1 slice toasted bread

2 fists of cherry tomatoes

basil leafe

salt

extravergin olive oil

garlic


Cut the tomatoes and put in a colander with salt for 5-10 (this will remove the excess of water and concentrate the flavour). Dress then the tomaotes with oil and basil.

Rub the garlic on your bread slice, and put on top the tomatoes.


Complete with a fresh glass of white wine or a fruit
