Basic sponge cake with oat flour

This sponge cake is good to be eaten like this, or very good for fresh dessert such a cheesecake or semifreddo.
Light texture, low in sugars and potentially gluten free (check the package of oat flour).

Ingredients:
I used a silicone baking tray 22 cm x 28 cm, and the sponge was around 1 cm thick.
45 gr oat flour
3 yolks
3 eggs white
pinch of salt
15 gr honey or brown sugar
Gently beat the yolks with the honey (or brown sugar).
Beat the eggs white untill stiff with a pinch of salt.

Gently add the white into the yolks mixture with a spatula.

Sift the flour and gently spoon by spoon.
Pour in your baking tray.
Static oven 200°C for 10-12 minutes.
