Bavette skirt steak, egg and sproutings

Ingredients:

200 gr purple sproutings

fresh chilli pepper

1 garlic

pinch black pepper and salt

2 tablespoons extra vergin olive oil

1 egg

small bavette skirt steak (around 70 gr)

1 oat cake

1 glass of red wine


Add half of the oilve oil in a pan with chilli pepper and garlic, after a minute add the purple sprotuing, adjust with slat and pepper. Add a tablespoon of water, cover with a lid and cook for around 8-10 minutes.

Cook the steak in another pan with the other half of olive oil. When the steak is ready (how long depends on your taste, I like quite rare), remove it from the pan: pour first the white and then the yolk.

I enjoyed my steak with a glass of Chianti.
