Pasta with amberjack and scorpion fish

Ingredients (2 portions):
60 gr pasta
260 gr fish (I used here half frozen amberjack fillet and half scorpion fish fresh fillet)
1 tablespoon olive (in olive oil)
1 tablespoon capers (in water)
200 gr homemade tomato salsa (or from store, just use one with nothing else added)
1 tablespoon extravergine olive oil
Fresh chopped parsley.

In a large pan, add oil capers and oilves on a medium heat. After a couple of minutes add the salsa, stir and gently add the fish. Cover with a lid and leave on a gentle heat for 6-7 minutes.
Remove the lid, let eveporate the excess of water. In the meantime, cook your favorite pasta in salty boiling water.
When the pasta is ready, mix it gently with the fish sauce (I liked to keep the fish fillet in big pieces, but you can "scramble" the fish with the salsa); serve it and top it with fresh parsley
