Salmon with butternut squash mash

Ingredients:

130 gr salmon (garnished with rosemary) 2 white onions (finely chopped) chili pepper 300 gr mixed pepper (I used frozen peppers!!) 200 gr diced butternut squash Tablespoon olive oil nutmeg black pepper salt 100 ml Chianti (or fruit)

In a pan put olive and then the onions and chili pepper. Add warm water as needed and let the onions soften.

Steam the butternut squash in the microwave (or over a hob) until soften. Put the butternut squash in a bowl and smash it with a fork.

Then, add half of the onions to the butternut squash, with pinch of salt, pepper, and nutmeg. Keep smashing.



In the pan with the remaining onions, add the peppers and let them cook until ready, stirring occasionally.

Steam the salmon in the microwave or over a hob. Plate everything and enjoy it! I did complete my dinner with a nice glass of Chianti. Do you fancy a glass of wine? No problem!A nice big orange, in season now, will work very well.
