Simple and quick breakfast sponge cake

A basic recipe, easy and quick to make. Perfect for breakfast with a nice cup of latte or tea, and balanced, as usual, in macronutrients.

Ingredients:
6 eggs
30 gr honey
80 gr oat flour sifted
10 gr unsweetend cocoa powder
20 gr almond flour
Pinch of salt
I used a 22 x 28 cm silicone baking tray. Static oven 180°C for about 20 minutes.
Put the eggs and honey in a bowl and beat until pale and fluffy. Put all the dry ingredients in a bowl and mix with a spoon.
Add, one spoon at the time, the dry ingredients into the eggs and honey mix: gently fold with a spatula (you want to keep as much air as possible: this will help the cake to rise in the oven). Gently pour in the cake tray and bake (always check the time as your oven might be different).
