Sourdough mixed flour and seeds bread

Ingredients:

250 gr starter

80 gr oat flour

120 gr whole grain flour

150 gr white flour

30 gr linseeds

15 gr poppy seeds

4 gr salt

200 gr cold water + some ready to use if needed







Break your starter in small pieces and add all the ingredients and if the dough is too dry add some water: in my case I used only the 200 ml water. Now, work with your hands on a clean surface and with the help of some flour. Shape your dough folding it like a book in every direction, until you get a smooth and firm ball. At this step, I've divided in two my dough, but you can just do one big bread. Let it rest and a wet towel and cover with a bowl. Wait for 90 minutes and repeat. Repeat. Wait 90 minutes and bake at 200°C for 30 minutes in a baking tray, then at 170°C for 20 minutes without the tray.
