Spicy edamame

Ingredients:
1 big carrot (around 140 gr), diced
100 gr celeriac, diced
170 gr edamame beans
Black pepper
Pinch of salt
1 tablespoon olive oil
1 tsp English mustard
Dessert to complete the meal:
2 kiwi
90 gr Greek yogurt
sprinkle unsweetened cocoa powder
In a pan on medium heat add olive oil, then the celeriac and the edamame. After a couple of minutes add the carrots (at the end carrots should be still a bit crunchy). Leave of high heat for a couple of minutes, the add a couple of tbs of water, cover with a lid and leave for 5 minutes. Remove the lid and add the English mustard; keep stirring until the liquid is reduced. Plate and complete with 1 oat cake
