I love cheesecake!I love chocolate! But I always found difficult to find a good chocolate
cheesecake without feeling a sense of "heaviness", first in my mouth and then in my stomach.
If after a meal, especially in summer time, I like something sweet but refreshing at the same time.
I did some trials to try to find a way to combine both chocolate and cheesecake love.
I found this recipe very sastifying: I've tried to balanced all major macronutrients, without excessively increase the glycemic load, which make this cheesecake a perfect snack or dessert.
Ingredients:
I used for the base my basic sponge cake (see recipe: https://www.tittifood.com/post/basic-sponge-cake-with-oat-flour).
420 gr cream cheese
380 gr Greek yogurt 0%
300 gr plain yogurt
1 tbsp honey
1 tsp vanilla paste beans
60 gr melted dark chocolate
30 gr dark chocolate drops
berries for garnishing

I found easier to build the cheesecake in the same silicone baking tray I used for baking the sponge.
Simply melt the dark chocolate.
In a bowl mis the two kind of yogurt, cream cheese, vanilla beans and honey. Take around a third of this mixture (no need to be very precise) and put in another bowl, and pour the melted chocolate on top: immediatly mix the chocolate and the cheese mixture togheter and pour over the sponge.

This will be your first layer, a 'stracciatella' layer.

Add the chocolate drops to the remaining cheese filling, and pour over the stracciatella layer.
Cover with film cling and let rest in the fridge at least overnight.
Just before eating, garnish as you wish with some berries.
