Crunchy baked salmon

A nice, different way of enjoying frozen fish: a few ingredients can make the difference!

Ingredients (for 3 people):


3 x 125 gr frozen salmon fillet

3 tablespoons extra virgin olive oil

2 tablespoons sesame seeds

10 pistachios (roughly crushed with a knife)

zest of a lemon

2 tablespoons wholegrain spelt flakes

2 tablespoons quinoa flakes

2 tablespoons chopped parsley







In a bowl mix all the ingredients but the oil. Cut the salmon fillets in cubes (about 4 pieces each fillet). Brush with the oil the cubes and then roll into the mix.

Place in a tray cover with some oven proof paper and bake at 180° C for about 12-15 minuts.

To complete the meal, serve with a slice of sourdough wholegrain bread (here an example of recipe: https://www.tittifood.com/post/sourdough-mixed-flour-and-seeds-bread, 400 gr of steamed spinach, 400 gr of turnip greens steamed and then slightly fry-pan in extra virgin olive oil, couple of anchovies and some chilli flakes.
