Lemon turkey with vegetables

Ingredients:

100 gr breast turkey (in the picture there is the portion for 3 people)
1 tablespoon oat flour
2 tablespoons extravergin olive oil
3 courgettes
2 small carrots
Steamed cauliflower (I had few cauliflower leftover: you can replace them adding another carrot)
30 gr mixed quinoa (cooked weight)
half of a lemon juice
Pinch of salt and black pepper
1 small slice of wholemeal bread (I had my homemade sourdough bread).
Cut the turkey in small pieces and cover with the flour; gently toss all the pieces and put in a warm pan with 1 tablespoon of oil, removing the excess of flour. Leave for 2-3 mintues, add a pinch of salt, then toss with a spoon. Cook for 4-6 minutes, then add the lemon juice, toss and let the turkey absorb all the juice.

In the meantime, steam 2 courgettes over slightly boiling water for 6-8 minutes.
Cut carrots and courgette as you like: in a pan over low heat, add half tablespoon of oil, then the vegetables. Add salt and pepper and cook for 4 minutes. Then add the quinoa, and cook for 2-3 minutes.
