Quinoa omelette with warm cheesy hearth, homemade guacamole and caulifower

Ingredients:
70 gr mixed quinoa (cooked weight)
200 gr mixed steamed cauliflower
1 egg
60 gr white egg
20 gr lighter cheddar
chilli flakes
black pepper
1/4 fresh fennel
1 tablespoon homemade guacamole
1 tablespoon extravergin olive oil
around 20-30 gr toasted wholemeal bread
Cook the quinoa as per instrcution on the package (I boiled it in salty water).
In a bowl mix the egg, white egg, black pepper and chilli flakes.
On medium heat, in a large pan add the extravergin olive oil, then the quinoa. Stir for a minute then pour in the egg mixture; cover with a lid and reduce the heat. After 2-3 minutes when the omelette is almost set, crumble in the cheddar, fold it and cover for another 1-2 minutes.

Guacamole:
1 ripe avocado
1 lime juice
pinch of salt
1 small dry chilli pepper
10 gr fresh coriander
1 teaspoon white onion.
